Why your tailgate packing list matters

A backyard cook forgives you. Forget the thermometer and you walk 20 feet to the kitchen drawer. A parking lot doesn't forgive anything. Forget one tool and you're either borrowing from the guy three spots down or eating pink-in-the-middle chicken.

The other problem is space. You're not loading a garage into a hatchback. Between chairs, a canopy, a cooler, and the actual food, your BBQ gear gets maybe one tote. How to pack for a tailgate cook

Here's my honest opinion, and it's the hill I'll die on: loose ice is the biggest mistake at the tailgate. I watch people pay 6 bucks a bag for frozen water, dump it over everything, and then fish soggy burger patties out of a cold soup three hours later. The buns get wet, the labels peel off the bottles, and half the "ice" is water before you even park. Reusable packs cost more once and then never again, and your food stays dry. The packing order that works: frozen packs on the bottom of the cooler, raw proteins in sealed containers directly on the packs, then produce and sides, then drinks on top since they're grabbed most. Keep one small pack in a separate lunch-size bag for the raw chicken so it never touches anything else.
