
Savor the Love: A Romantic Rack of Lamb with Herbs for Your Valentine's Day Dinner
A grilled rack of lamb is a showstopper, and it's a great choice when you want to make Valentine's Day dinner feel like a real event. Here's how I make mine.
Ingredients:
- 2 racks of lamb, frenched
- 2 tablespoons olive oil
- Salt and freshly ground pepper
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
Instructions:
- Take the lamb out of the refrigerator 30 minutes before grilling to let it come to room temperature.
- In a small bowl, mix together the olive oil, garlic, rosemary, thyme, parsley, lemon juice, salt, and pepper.
- Brush the mixture generously all over the lamb.
- Preheat your grill to medium-high heat.
- Place the lamb racks on the grill and cook for about 10 minutes on each side, or until the internal temperature reaches 135°F for medium-rare.
- Let the lamb rest for about 10 minutes before slicing.
- Serve the grilled rack of lamb with some extra herbs sprinkled on top, a squeeze of lemon juice, and some freshly ground pepper.
